New Zealand Blue Squash (Cucurbita maxima)
This squash has a striking gray blue skin, flattened in shape and
ribbed. It is an excellent keeper and can be stored for 6 months or more
if kept in a cool location. The thick flesh is deep orange, and is very sweet
and delicious. New Zealand Blue's are excellent when baked or boiled. It can be substituted in any recipe that requires pumpkin and tastes just
as good, if not better!
The New Zealand Blue has a large growing habit. The vines can spread out
10 feet or more, with mature fruits weighing an average of 8-10 pounds.
Matures 90-100 days after planting. Plant seeds at a depth of 1 inch in hills spaced at
3-4 feet apart. For best germination, plant once the soil temperature warms
to at least 70 degrees. These Squash love full sun and frequent watering
during the hot summer months.
New Zealand Blue Squash are interesting and unique enough to display as an
ornamental. A great market seller for not only the flavor, but the shape
and color.
